Boozy and Delicious Keto Eggnog
Eggnog is a festive favourite in our household and Christmas just wouldn’t be the same without it! The premixed version available in the supermarkets is loaded with sugar. We live a ketogenic lifestyle and choose not to consume sugars anymore so this version is a complete no go!. After experimenting with some ingredients, I’ve invented my own version, a keto eggnog, and i must say, it tastes great! Christmas is no longer cancelled because we can all have our keto eggnog and keto-on! It’s super quick and simple to make and you can make this as alcoholic as you like!
Of course you can remove the alcohol all together too if you wanted to make a non-alcoholic version, just skip the shots of vodka and rum! The recipe below makes two BIG glasses so feel free to half the ingredients if you wanted to make two smaller glasses instead!
• 600ml double cream
• 5 egg yolks
• 3 shots of vodka
• 4 shots of spiced rum (I used Sailor Jerry)
• 75ml of cold water (to stop the mixture from being too thick – you can add more or less in to suit your tastes)
• Liquid Stevia (i used about 20 drops, add in slowly and add more/less to suit your taste)
• 1 teaspoon of fresh lime juice
• ¼ teaspoon of nutmeg
• ¼ teaspoon of cinnamon
This recipe couldn’t be any simpler! Put all the ingredients (except the water) into a blender and give it a blast for a few seconds until all of the ingredients are combined. Slowly add in the cold water until you reach your desired consistency. Add more cold water to thin out the texture if you prefer your eggnog runnier (I like mine nice and thick). If you don’t have a blender, put all of the ingredients into a large bowl and mix together for a few seconds until ingredients have combined using an immersion blender (following the same instructions regarding the water). Leave the eggnog to cool in the fridge if you can wait a while to drink it. I ended up getting stuck straight into my first batch and it still tasted delicious!
