Delicious Keto Mayonnaise!
One thing that comes very close to my first love – butter, is mayonnaise. It’s shocking to read the ingredients found in the junk in jars that you can buy from the supermarket! Step away from the processed rubbish and make some real mayonnaise, using real, ketogenic and low carb ingredients! It couldn’t be simpler and it’s ready in minutes! Its super versatile too! You can easily adapt this keto mayonnaise recipe and use it as a dressing for salads or a dip to accompany your favourite keto snack by adding herbs and spices. Since creating this recipe, Keto mayonnaise has become a fridge staple in our household. I wanted to share this recipe with you all so that you can all enjoy the mayonnaise goodness with me!
3 egg yolks (room temperature)
400 ml of mild olive oil
3 tbsp apple cider vinegar
3 tbsp lemon juice
3 tbsp mustard
1 clove of garlic (optional)
Handful of freshly chopped chives & flat leaf parsley (optional)
One thing to note is that there are a few ingredients that could potentially cause a few problems for those of you on a ketogenic diet. Mustard and vinegar can be a minefield when it comes to non-keto ingredients, so i have included a link to my favourite brand of keto friendly mustard and apple cider vinegar to help you on your way.
Put the egg yolks in a mixer (or use an immersion blender on a low speed and a high sided bowl if you don’t have one). Start to blend and slowly pour in the mild olive oil. Continuing to blend, add in the apple cider vinegar, lemon juice, mustard and the mixture should become really thick, just like mayonnaise. Add in the garlic, chives and parsley and voila – the keto mayonnaise is ready!
I usually store the mayonnaise in an airtight glass jar in the fridge. It should last a good week – although i’m sure you will have eaten it all within a few days, it really is delicious!
